Got Caught...... little editing

I'd planned on eating dinner in town for Friday fish night at the local restaurant. Holy CRAPOLAaaaaa about 17:00 the wind driven snow was like a blizzard. That wasn't in the forecast. I gotta come up with something for dinner in pretty short order. A couple potatoes and an onion for starters.



BACON !!! Everybody likes bacon . I snip up 6-8 slices into the frying pan.



Diced onion in with the bacon to fry will temper the mix keeping the bacon from overcooking



While the bacon and onion simmered away I peeled diced and parboiled the potatoes.



Before I added the boiled potatoes to the bacon I sprinkled a 1/4 cup of sugar 1 tablespoon of corn starch and a tablespoon of flour.around the mix to absorb any moisture and bacon grease.



During the summer I freeze our extra sweet corn we can't eat for just such times as these. Probably about a pint or the equivalent of a can of whole kernel corn



The corn juice thickens with the potato water forming a gravy. To bring out the twang a hit of vinegar is necessary.... 2 tablespoons is a close proximity.



That's how a stormy Friday night meal is made here on the fly... JD calls it "German slop" ........ we both enjoy this basic of the Midwest and hope you give it a try too.

What the heck happened to our weather??? Only 5 F here this morning when we woke up? Had to get into the deep freezer for some stuff... There's still plenty of sweet corn put away from last summer.

Winter brings on those weird cravings. I was informed at lunch that he wanted meatloaf for dinner. Luckily I had picked up a package of crap ground beef by accident not noticing was in the breakfast sausage counter.



First off "GOOD" meatloaf happens with "fatty" 8o lean hamburger. It has that grease bind and flavor the loaf. 1* egg per pound of meat. I diced about half that onion and 1/2 cup of the Italian breadcrumbs.



I had some frozen diced red pepper too.



You gotta use your fingers to mix it too... nothing else will get the mixing done right.



The red sauce for the top is a half cup of ketchup and 1/4 C brown .... some add a touch of vinegar too.



Bake in a moderate oven... 350 F



I just happen twice baked potatoes handy to warm up with some green beans

Pinkie here is the canned chicken we were talking about last night. I get it at the Dollar General with their store brand, however, after looking there's many other brands available on the market.



When I use it for chicken salad I get 3-4 nicely filled sandwiches. For noodle soup I add some bouillon cubes to supplement the broth. It's just one of those handy things to have stashed in the pantry.

Why does seem the SHI* always hits the fan at night? One might ask Fredrick Fleet (1887 - 1965) the crewman who spotted the "iceberg Right Ahead !" from the crows nest of the Titanic on the cold night in April.



Last night as I tossed wood into the fireplace getting ready to hit the hay after a pleasant evening chatting with friends in the LOBBY. I heard an odd humming/buzzing noise not in sync with the usual household clamor. The fan that circulates air the fireplace heating the main level along with the basement decided it was time "F" UP!..... I flipped the circuit breaker installed a window fan in the "emergency access" then went bed.



Pumpkin HATES excitement or distractions in his pantry. This morning I began cleaning and moving stuff so we could change the "snorkel fan." I gathered up lights, tools and located the extra fan out in the shop. I started a fire so we could do test runs of the new fan... Half the morning spent in prep of this undertaking.



Just for schitz und gigglez JD walks over the main utility panel and flips the circuit breaker back ON..... the old fan takes off as if nothing had happened.... The Viking welled up inside me and I just wanted SMASH something with a hammer! The whole morning spent in prep of a major operation ... JD just flips a switch.

the Time to let go

Many of us have beloved pets around us. They come in all types, shapes and sizes. We love them care for their needs then the day comes when we must say "Good bye" Not an easy thing to do.



We had a Big B that lived well beyond the normal age for a . Pampered, cared for above and beyond the norms of other equestrians. How did he do it??? Love



Our adopted Greyhound ,Rosie is the oldest of MUTTs Inc approaching years very soon. Bright, spry she has gears stop and GO! She might be getting cataracts but there just is no slowing her abundant energy.



Roxy is our quiet gurl... stealthy silently down the hall to the bedroom with her bedtime cookie. She's about years old on the upper side of longevity for a Rottweiler. Her fear is coming down the stairs. She will stand and bark until I come to slide down the steps holding onto her collar so she does not fall.



Ruby our 5 lb fluff ball is next at years. I rescued this Great Pyrenees from being put down by a "shelter" simply because of her size. Her happy joyful temperament is shared with everyone she comes into contact with.



Ronnie.... who gets mixed with our stable hand also named Ronnie. This Hungarian Viszula very nearly went extinct through the rigors of world wars. We rescued him after a hurricane separated him from his family and he languished to be put down within days. He now bounces through the house thinking Rosie is his mommy.



Lastly is Pumpkin... a name drawn out of a hat after friends on the site submitted their suggestions. Pumpkin was a stray kitten that went a tree near the house and had to be saved. He now guards the pantry from rodent pests gaining weight every autumn.



Never easy to say "good bye" I firmly believe our babies stay close watching over us.

On occasion "Cheaters do Prosper" For Valentine's breakfast I made sausage gravy with poached eggs for us and MUTTs Inc



I had to cheat using store bought biscuits from a tube.



I should be ashamed of myself for stooping so low....

Super Bowl LVI is the upcoming championship game of the National Football League for the 2021 NFL season. It will be played between the National Football Conference champion Los Angeles Rams and the American Football Conference champion Cincinnati Bengals in the SoFi Stadium in Los Angeles.



For me it is not so much the game as it is the food.



Here in Iowa one item in abundance are "Little Smokies."



Those irresistible spicy morsels you just can't leave alone.



We like them so well we're having some early.



Topped with barbecue sauce and cheese.



Popped in the oven for a few minutes.... Then dig in and enjoy !

Babysitter

Ronnie, our stable hand was once again assigned to "babysit" me to keep me from handling sharp objects or doing anything deemed "Stupid." Ronnie then decided to help me cook lunch.



Homemade chicken noodle soup. I'd purchased a "Family pack" of chicken breasts. In the pack was one of the largest breast halves I'd ever encountered. For a moment I'd contemplated that a turkey had slipped through the gates. I hadn't planned originally blogging "our" soup until the process was over and we tasted it.... Exceptional .... No way to back track and a part of the credit belong to my faithful assistant-- Ronnie.



The broth we cooked the breast in had this array of spices and seasoning. Ronnie diced the chicken as I picked the meat from the bone. I added diced celery, onions and a bag of frozen Peas & Carrots.



Amazingly *Two Chefs* do not ruin the broth! The soup was perfectly delicious for our lunch.

Normally I avoid politics in my blogs. Especially politics of a foreign nation., however, I just want a slight bit of leeway here.



Just bare with me briefly as I speak my peace. A considerable portion of our income is derived from trucking and interstate commerce. Truck drivers are a different breed of cat.... one of ours has been with the family over 20 years. Also Canadians, from my experience, are probably the most docile, law abiding people to walk on the face of this planet.



Some of you might have noticed events up in Canada where Canadian truckers have formed a convoy across Canada then occupied the capitol of Ottawa. The truckers have various Covid mandate queries they wish to bring up for discussion with the government. This seems to me most reasonable, prudent, and proper.



PM Trudeau had plenty of time and opportunity to meet with the leaders of the movement, however, he out of hand dismissing them essentially as yokels unworthy of his council. . Yet the PM met with the BLM, an organization that has burned, looted, and murdered across the USA, Canada, and the world. I believe the PM has made a grievous error in judgement. When you can upset the very persons who have seen to it food gets delivered, fuel to heat the homes and clothing to protect from winter's bite have been abundantly provided... then I believe there is a serious problem developing.

side note........

I have since heard it is illegal to honk your horn in Ottawa..... LMAO !!!! you gotta be kidding me. Also reports of CONFEDERATE FLAGS & SWASTIKAS In all the footage from Parliament area I seen 2 "Don't Tread on Me" flags.. 1 13* Star Betsy Ross flag attention CBC these are from the REVOLUTIONARY WAR.. not Confederate. and NOT 1 swastika???? Plenty Red & White Maple Leaf flags of Canada everywhere along with some provincial flags too. I dislike the dishonesty of the mainstream media.
