Anyone who has grown their own veggies will know that sometimes we are left with an excess supply. Below is a simple sauce that I made with tomatoes and herbs from my garden. No need for measuring or weighing just use any quantities you like but please don’t overwhelm the flavors with too much garlic.

Ingredients: Tomatoes, Onion, Celery, Garlic.
Basil, Oregano, Sage
Pepper & Salt

1. Chop tomatoes into large chunky pieces (skins can be removed if you want to).

2.Chop Onion and Celery to desired size.

3.Finely chop or grind herbs and garlic (packaged herbs can be used if you don’t have fresh).

4.Place all ingredients in a large pot and simmer with lid on stirring occasionally.

5.When vegetables are soft remove lid, add pepper & salt to taste and continue simmering until the mixture is reduced to desired consistency.

6.Cool and store in containers in freezer.

The sauce can easily be defrosted and ready for use. Add some mince meat and serve with pasta or spread on toast, brochette or a pizza base. It can also be used as a sauce for steak or chops.

With the letter A being the topic this week I felt I had to post a pic of my country Australia so I took this picture of the Australian map from an Atlas.

Some early morning shots of my window view. Before I go to work for the day I sit with my coffee and watch the sun rise, so peacefull and the best time of the day before all the hustle and bustle starts. And then there was the morning of the dust storm when I couldn't sit outside all day.

The bottom pics are when the ducks decided to use my pool as a watering hole, we had a long length of time in drought and the pool was their best option.

Pictures of the Pasha Bulker (a large carrier ship) stranded at Nobbys Beach during some very wild storms in June 2007. The ship was in the ocean outside the harbor waiting to load coal when she ran aground at the beach. Salvage took almost a month and getting her back into the open waters was no easy task weighing 76,741 metric tons of dead weight in the sand and reef.

Other pictures in calmer times on the right from top to bottom are Canoeing at Ettalong, a charter boat at Phillip Island and part of the marina at Toronto.

February 2007, The Queen Mary 2 in Sydney Harbor during her first world cruise and The Queen Elizabeth 2 (also on her world cruise). The QE2 has now been retired ending her final voyage with her arrival at Dubai in November 2008. The QM2 is owned and operated by the Cunard shipping line and remains the largest ocean liner in service.

The pictures were taken while the Big Ships were in Sydney Harbor along with various other water craft.

Lightning over Sydney Harbor is my favorite, so bright you can see the buildings and bridge in the background.

The other pictures show parts of Sydney across the harbor taken from various locations around the points, you can see the Opera House barely showing from behind the Queen Mary 2.

The pictures show some of the decorations at my 's house where we spent last Christmas and Boxing day with our traditional family get togethers (approx 26 of us).

My gets a lot of joy from her excitement as she takes out the decorations every year and they all help to put them up. As I write this I can remember the excitement that her and her brother showed while helping with the decorations when they were , guess she must remember that too.

Terrigal Haven and part of the beach where I used to spend a great deal of my time with friends when I was a . So much has changed since then, the carpark used to be part of a caravan park until the big waves many years ago (can't quite remember when) washed caravans away and left a deposit of huge rocks in its place. The scillion where we used to climb to the top just to roll down the huge slope was up a little further.

Terrigal has now been rebuilt as a tourist spot with a huge motel and all the little speciality shops along the way. So different now from times gone by.
