Dancing in the Dark

The night light in our basement bedroom burned out in the overnight leaving us in the dark when the alarm clock went off. All that came to mind was Bruce Springsteen's 1984 hit~~~" Dancing in the Dark" .



Jack Frost also snuck in with the fog



On TOP of ALL THAT !~~~~ Ruby decided she wanted to sleep under my desk rendering me no leg room to post this.

Bretty's Peach Cobbler

Sorry about last night. I did manage to have a few bites of this delicious Peach Cobbler with a little ~~~Twist ~~~.



Remember those nasty tough peaches from "Green Acres" Yaaa Lisa had a hand in canning them for sure! I figured a way out of them by making a peach Cobbler where I would dice them up and cook them more making them palatable. I also had some peach preserves that are not to our liking



I dumped the can of peaches into my Danish hand crank blender with several heaping spoons of peach preserves, 2 heaping teaspoons of cornstarch, and a half cup of sugar. I gave the crank a whirl dicing and mixing it all up.



I melted a couple tablespoons of butter in my nukeable baking dish then poured in the peach mix. scrapping out all the peach juice.



For the topping I used about a half cup of buttermilk pancake mix, half a cup of flour, a heaping teaspoon of baking powder, tablespoon of sugar, a teaspoon of vanilla, an egg, along with a splash of milk till I got the consistency I wanted.. (sorry.. the picture did not turn out. ) I placed my baking dish in a 350 oven for 25 minutes. The Bretty Boy Peach Cobbler came out a golden brown with an ultra fluffy crust.



We enjoyed the cobbler straight outta the oven with some melty ice cream to cool down the dessert enough so we could dive right in and eat it.

As Promised to my friend Pinkie here is the Hot Fudge Topping recipe for your ice cream! I cut it by a quarter what I make for us. Just put the leftovers in a covered nukeable container.



Start with a tablespoon REAL butter in a medium saucepan over low heat....( not margarine... it won't work... too much water.)



Add a 1/4 cup corn starch and heavy half cup sugar or scant 5/8s cup to the melted butter quickly working it in.



It is best to have all your ingredients already measured out and handy. You need to mix in a 1/4 cup cocoa briskly.



Stir in 1 1/2 teaspoons of vanilla. Stay calm and deliberate but keep a steady rapid pace.


Add 1 1/4 cups milk ( best if Whole milk or add some half & half) Here you get to slack off by blending the milk in with your cocoa mix. Raise the temp to medium high and begin stirring. You may want to also change between your spring coil wire whisk and rubber spatula stirring the mix. IF things start to get ahead of you just pull the pan from the heat.



When the mixture starts to close in on 180 degrees you will notice a "tugging" at the bottom of your pan; reduce the heat to medium and keep stirring.. don't leave it for an instant!

RARE Event !

I extremely dislike those who flood blogs with multiple postings, however, this is such a RARE Event for Iowa in January I need to share it.



WILLIAMSBURG, Iowa ~~~ A tornado touched down in Iowa County Monday near Williamsburg.



Nick Stewart took photos of the storm and says it appears to have lifted around 2:20 p.m.



While the tornado was in progress, the Iowa County Emergency Management reports a semi was blown over.



The National Weather Service says it was an EF-1 tornado with estimated wind speeds of 90 miles an hour.



It was on the ground for roughly 8 minutes and traveled around 4.7 miles. No injuries were reported but there was minor damage to a cattle shelter, tree damage at a farmstead before it lifted near Highway 151.



A second tornado occurred briefly around 2:50 p.m in Linn County. The NWS classified the tornado as an EFU. No damage has been reported from the tornado.

Today was Packratt Bretty day.



An older couple at one of my rentals bought a new loveseat but had no way to dispose of the old one. I took one look and said YA!~ Brown leather , great construction, I put it in the Beemer Pad. The old couch I had I will donate to the Ladies Charity in town.



They even had a super foot rest.



MUTTs Inc now have a bed to keep an eye on things in the back yard.... Ruby tends to grab it first!



I had to go to Farm & Fleet for some equine supplies JD wanted. There in the driveway leaving the business laid a can of spray paint with it's lid still on. "ODD" I thought... I got out and a can of High Temp Blue paint ! Brand NEW ! FULL ! never been used.

Poor Rosie was Unnerved !

Someone had not latched the outside screen door allowing it to blow in the wind.

Verging on Unhinged Rosie let me know of the dilapidation for me to remedy !

I made a corn flake crumb chicken breast with fries.



There are *FIVE* Potatoes worth of FRIES just for ME!

Yes I am a Cinderfella; One of the tasks I perform is to clean the ashes from our fireplace.



Today in the ashes remained this iron object. 3.75" across with an inner diameter of 3.25"



The piece is 1.665" across with one lip flat; the other rounded.



This is the type of split wood we are currently burning in the fireplace. Luckily we didn't hit it with the chain saw when cutting it
