As Promised - Lemon Cornbread



I got this recipe from a book by Laura Childs called "Stake & Eggs" a murder mystery that takes place in a small restaurant.

LEMON CORNBREAD

Ingredients

1-1/4 cup brown sugar
1/2 cup oil
3/4 cup sour cream
2 large eggs
2 cups all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
3/4 tsp salt
1 cup cornmeal
1/3 cup lemon juice
1 tbsp. lemon zest

Instructions:
Cream together brown sugar, oil, sour cream and eggs is a small mixing bowl.

In a large mixing bowl, sift in flour, add baking soda, baking powder, and salt. Stir together and add in cornmeal.

Now pour creamed mixture into large bowl and stir until just combined. Then add lemon juice and lemon zest. Stir again.

Pour mixture into a greased 9x11 inch baking dish and bake at 400 degrees for 25 minutes.

(I had to use a 9x13 pan so should have baked only 20 minutes) but it was still quite good!

Thanks-great inspiration! We loved it.
This makes nice muffins too.
I altered to reduce fat/cholestral.
Used fatfree yogurt instead of sour cream
4 egg whites instead of whole eggs and unsweetened applesauce(from my freezer stash) instead of oil.
Sprinkle tops with a sugar/cinnamon mixture.
