How Long Do They Last ?


Earlier this week I was at Costco stocking up an food. I saw they had hams on display. Since I am going to cook a traditional Easter dinner for the family I was wondering if one would last 2 weeks. In the past I always bought ham no longer than a week before serving it. Any leftovers were gone in a couple of days so it's longevity has never been an issue.

I finally found the sell by date - June 14th!!!!! I know they are smoked to preserve them but I can't help but wondering what else might be in ham to make it last longer. 2 months seems to be a bit of a stretch.

But - but while you would be a welcome guest I don't think that is what they had in mind when they requested ham.

Thanks - answers some of my wondering. When I was a little kid on my grandparents farm I remember hams hanging in the smoke house but didn't remember the time element. When I was older we didn't do ham any longer.

Using food grade "Saltpeter" (Potassium Nitrate) and rock salt in curing ham, the ham can be stored 6 months to a year or longer.

If saltpeter is what it used to be most men will stay away from ham. Is it bacon too? Think I will check this out and if true it will mean far less bacon eating for the men in my family.
