Cookies, Cookies and More Cookies!! Well, I put off baking my Christmas cookies until the last minute. So, I've been making and baking cookies for the past two days. My motivation?? My bf has this huge kitchen and when asked, he said I could make the cookies at his house!! Boy was he surprised when I arrived with all my power tools -- lol -- food processor, cookies sheets, brand new stand mixer, etc. -- and all the fixings for baking and decorating. Since the last batch is in the oven, I thought I'd share some recipes for those that might still need to make cookies. Chocolate Cookie Bars 1 box of chocolate cake mix 1& 1/4 sticks of margarine (melted) 4 egg whites sugar semi sweet chocolate chips (12 oz bag) sliced almonds (8 oz bag) Mix box of cake mix and margarine together spread on non greased 15x10x1 inch pan beat egg whites slowly adding sugar until peaks form spread on top of cake mixture sprinkle with semi sweet chocolate chips and sliced almonds Bake @350 for 25-30 minutes Let cool for approx 15 minutes then cut into bars. I am so clever that I substituted a white cake mix & sprinkled butterscotch chips & walnuts and created a second cookie choice!! Cranberry Nut Bars 2 eggs 1cup flour 1cup sugar 1/3 cup butter or margarine, melted 1& 1/4 cups of fresh or frozen cranberries 1/2 cup walnuts Grease 8 in. square pan beat eggs until thick gradually add sugar stir in flour and butter, blend well add cranberries and walnuts - mixing gently Spread evenly in pan Bake for 40 - 45 minutes at 350 or until golden brown and a toothpick inserted into the center comes out clean cool and cut into bars All for now...gotta take those cookies out of the oven!!  The positive is there. Sometimes it's just hard to find. |
