the perfect sandwich for a hot day.....


i live in a very warm climate here in el paso and it gets extremely hot in the summer. i don't use the oven much until the weather cools down
and i tend to eat much lighter....i live on fresh fruit and sandwiches. here is a recipe for a great summer sandwich...pan bagnat (pan ban-YAH) which is french for soaked bread. two suggestions: use the ripest, freshest tomatoes you can find and make this with one of those long, thin crusty french baguettes. other unsliced breads work but a baguette works best. trust me.

pan bagnat

one loaf french bread, sliced in half lengthwise
2 large, ripe tomatoes
1/2 cup shredded mozzarella cheese (i use fatfree)
1/4 cup finely chopped fresh parsley
2 green onions, finely chopped
2 tablespoons wine vinegar
1 tablespoon olive oil
fresh ground salt and pepper to taste

peel tomatoes (score 'x' on top, drop into boiling water for about 20 seconds and then run under cold water to remove peel), cut in half and seed with a spoon. throw away seed and pulp and dice the shells. remove the soft insides of the bread and tear into small pieces (pea sized). place diced tomato, bread, cheese, oil and vinegar and spices in bowl. mix. use this to stuff back inside the loaf. wrap loaf tightly in plastic wrap, flatten a bit with hands and refrigerate, at least overnight. cut into 4 pieces.

i also like to add a handful of chopped fresh basil and a couple sprigs, chopped, of fresh thyme...but you can experiment with different cheeses, different herbs and different bread.

As John Gotti used to say, "All I want is a f*****g good sandwich."

I also live on sandwiches, espcially when it's hot. I've made something like the recipe dlw posted, expect I like to "candy" my tomatoes in the oven.

Some of my other favourites are,
chicken, cashew and grape with curry mayo on multigrain
grilled vegetables with fresh basil and parmesan, in a whole wheat pita,
barbequed salmon with cucumber mayo on dill bread,
grilled brie cheese with pear,
turkey waldorf (turkey, celery, dried cranberries, walnuts, and apple with yogurt mayo)
free range egg with roasted red pepper,
roast beef with red onion and Beefeater Gin Mustard with green olives.

Sandwich heaven.............
