Elderberries



Our fencerows are full of elderberries which are now in full bloom. The sweet scent drifting when the wind dies down. I plan on harvesting some for juice and jelly. I will use the same process on the elderberries as I am doing on the grapes. With the 4th of July looming Martin and I are swapped trying to get the mowing and landscaping done for our customers so we might enjoy the weekend.



You have not slipped from my thoughts I am merely working at home, in the office and out mowing.

I need to do some housework yet. My gal was her cleaning and I am astounded at all the stuff she got done while I was in town with Martin. I've been just swamped... last night I sat down with JD and fell sound asleep even though I still had work to do. I bought 10 bags of grapes at the low price. I have jars washed and ready I just need to pick the grapes and get them ready for Alex to help me. Look back in my blogs about canning grape juice.

I love the blue elderberries....we have the red ones here, but they're not good for Human consumption, though the birds love them and the indigenous people used them for cleansing...... The blue ones thrive in the interior though and my sister makes jelly with them. I went to a potluck there where people had picked the flower clusters, dipped them in a batter and deep-fried them like doughnuts and then sprinkled them in powdered sugar.......They were so delicious......like eating a piece of a Spring morning.........

Darter, you work too hard. You are supposed to be still recuperating from your car accident injury. Take it easy before you hurt yourself. You have to remember you are 65 years old.

When I do the elderberries I will try to blog the juice and the jelly making. Right now it's the sweet scent I enjoy. I'll see if I can figure out the flower cluster batter while Alex is here. I just hope the flowers are still fresh enough.

I am awake at 01:30 ish meds wore off. I have so much to get done Martin and I want to be done Friday if we can

I like the photos of the elderberry shrubs and graceful grass in the foreground. Interesting knowing you'll use the same process for elderberry juice and gel as grape juice. Would you make elderberry cordial in much the same way?

Beautiful.....they grew (grow) everywhere on the farm I was raised on.

I've had a Schnapps similar made with currents. I can give it a try

If you have the time/inclination (it sounds as if things are quite hectic on the farm at the moment) - I asked out of curiosity because I was given delicious home-made elderberry cordial to try (mentioned in a previous blog). I'm not familiar with the elderberry's fragrance - light & sweet? How exhilarating it would be drinking in its perfume on passing by/when carried by the breeze
