Bret's Cannery Part 2



Screw on finger tight each rim securing the lid.



With some canners you might need a "spanner" jar to take up space so jars don't move in the boiling water or clatter.



Place on the lid and process one hour after water surrounding the jars comes to a rolling boil.... NOT SHOWN..... in the bottom of my roaster is a rack... do NOT place glass jars directly on the bottom of the pan... they will EXPLODE !



After an hour I just turned off the heat allowing the canner to cool down over night These are my jars of home made grape juice. You need to shelve your juice for about a month so the flavors totally develop.

MANY years ago I would help my grandma make this. She would can easily a 100 jars from Grandpa's grape vines.

Sounds like a dangerously explosive process to me, so I won't be attempting it any time soon. I will stick to my apple sauce in the fall. Good work, Bretty. The finished product looks good.

It was a nice day here at 69F, light NW wind, clear sky. I was doggy sitting and walking 2 little doggies today. Also rented out some space in my garage for mt new neighbor to store some things while they are waiting for their totally renovated 1946 2 storey house to be finished. They are moving out of their accommodations in the city at the end of June.

Grandma was inexhaustible which is probably where I get my drive and stamina.

Thanks so much Brett for kindly providing step-by-step instructions (along with photos) on how to make grape juice - much appreciated . I am a little taken aback as it's nothing like I envisioned. So the process is more like canning/preserving. I've never seen a canner before - interesting equipment which looks as if it can accommodate quite a few jars. Thanks, the metric conversion only needed a minor tweak. Fascinating. I'm keen give it a try next summer. I have a friend who is keen on preserving so she might be interested in joining me (she has a wealth of experience to keep me on track ). I imagine you eat the preserved grapes also? I'm really looking forward to sampling the juice - do you drink it straight? You mentioned elderflower earlier - I had a most refreshing home-made elderflower cordial given to me which is now easily among my favourites. [On a savoury note, I'm keen to try the preserved lemons I made when ready. I have a weakness for middle eastern foods as well as Indian and south-east Asian]

There are also several videos posted on YOUTUBEe with step by step help too. The juice we just strain off and drink straight off chilled.. The grapes can be eaten too.

There are ways to do full immersion water bath canning too in deep "pasta" pans.
