Kitchen Klatter



Winter brings on those weird cravings. I was informed at lunch that he wanted meatloaf for dinner. Luckily I had picked up a package of crap ground beef by accident not noticing was in the breakfast sausage counter.



First off "GOOD" meatloaf happens with "fatty" 8o lean hamburger. It has that grease bind and flavor the loaf. 1* egg per pound of meat. I diced about half that onion and 1/2 cup of the Italian breadcrumbs.



I had some frozen diced red pepper too.



You gotta use your fingers to mix it too... nothing else will get the mixing done right.



The red sauce for the top is a half cup of ketchup and 1/4 C brown .... some add a touch of vinegar too.



Bake in a moderate oven... 350 F



I just happen twice baked potatoes handy to warm up with some green beans

This morning when I woke up and looked at the outside temp on the thermometer it just said -2-... I'd hoped I'd left it on Celsius.....I hadn't... bbbbbbbbbrrrrrrrrrrrr

STR I do10 lb loaves at harvest time forpour guys. Hot meals and cold sandwiches.

Thank you darter i am definitely going to try the chicken salad sandwiches sounds delicious and chicken salad is one of my moms favorites!!!

That's just about the same way my gramma, my mother, and I have made meatloaf. Usually mashed potatoes with it, and often with green beans too.
Delicious combination.

I have used oatmeal at times, but prefer crushed up saltines. Your harvest production sounds a little like my routine cooking when all the kids were home. When I made meatloaf, it was always with 5-6 pounds of hamburger, hoping there would be some left over for sandwiches or another meal. We had 8 kids.

With that large a family you'd need a good sized meatloaf. I get a work crew of hungry Iowa farm boys who expect to be fed proper meat potatoes veggie with plenty of bread.I make donuts 3 dozen at a time my counter set up like a factory...LOL!
