LETTER T

THYME

Thymes are relatives of the oregano genus Origanum.

Thyme is indigenous the Mediterranean region[

Thyme is used adding layers of flavor without being overwhelming. It's commonly used season soups, sauces, and braises. It also makes a welcome addition in potatoes, rice dishes, vegetables

I USE THYME IN SOUPS AS WELL AS STEWS AND WHEN COOKING A ROAST PORK CHOPS

TARRAGON

Tarragon, also known as estragon, is a species of perennial herb in the sunflower family

Tarragon is one of the four fines herbes of French cooking, and is particularly suitable chicken, fish, and egg dishes. Tarragon is the main flavoring component of Béarnaise sauce. Fresh, lightly bruised sprigs of tarragon are steeped in vinegar produce tarragon vinegar. Pounded with butter, it produces an excellent topping grilled salmon beef.

I USE IT SPARINGLY. USUALLY IN CHILI, GUMBO, CABBAGE POTATOES

BASIL CAN BE USED AS A SUBSTITUTE, I PREFER USING BOTH.

TABASCO PEPPER SAUCE

TABASCO PEPPERS HAVE BEEN GROWN ADN MADE INTO PEPPERS SAUCE SINCE 1868.

LOCATED ON AVERY ISLAND, LOUISANA

BY THE McILHENNY FAMILY

AVERY ISLAND IS OPEN TO THE PUBLIC. IT IS LOCATED IN IBERIA PARRISH SOME 0 MILES WEST OF NEW ORLEANS

Under the Avery/McIlhenny family's management, Avery Island has remained a natural paradise, inhabited by many animal species, as well as by exotic plants from throughout the world. Edward gathered eight egrets, raised them in captivity on the Island, and released them in the fall migrate across the Gulf of Mexico. The following spring the birds returned the Island with others of their species, a migration that continues today.

Edward McIlhenny introduced numerous varieties of azaleas, Japanese camellias, Egyptian papyrus sedge, and other rare plants to the Island's natural landscape. When oil was discovered on the Island in 1942, he ensured that production crews bypassed live oak trees and buried pipelines ( painted them green) preserve the Island's beauty, wildlife, and utility as a wildlife refuge.

Until recently, the only seasonings I used for cooking was salt, pepper, and sometimes garlic. Now, I use rosemary and thyme. Maybe I should check out that tarragon, but you can keep your tabasco and other hot peppers.

Very tasty selection of "T" photos. I love parsley, sage and thyme stuffing. Some herbs even have beautiful flowers, the best of both worlds.
