Watermelon Pickles

I can't ever begin to think how many jars of traditional Watermelon Pickles I have made. So last night I made Cosmopolitan Watermelon Pickles. Turns out, they are quite tasty!

If you have grands or just like a playful treat, try making these with Kool-aid. I used a natural calorie free sweetener with 1 cup lemon juice for my acid.

Twilight I have never made watermelon pickles but I recall they used to make them from the rind of the watermelon. I think they were made with vinegar, sugar and maybe pickling spices.

You are indeed correct. The ones in the picture are made from the rind and a concentrated pomegranate juice. I have 1/2 a watermelons worth of rind left which will be prepared as a mock apple pie filling. I do make a few jars of the traditional pickles every summer and let them set until the holiday season.

I like watermelons, I like pickles but this seems rather weird.

I would try them but I no longer can anything and haven't for. several years...Kroger or Walmart "cans my things now"

I have never heard of watermelon rind used for making mock apple pie. I have heard of Ritz crackers being used in mock apple pie. An interesting concept Twilight.
