HOLY TRINITY of Jambalaya!!!

Earlier this week our exalted Spiritual Leader called me and asked what I was bringing to the potluck. JAMBALAYA!!!! When I first joined the Religious Society of Friends, my contribution to the potluck consisted up picking up a desert at Wal-Mart . The Instant Pot makes cooking REALLY easy.

I started out with The HOLY TRINITY = Celery, Pepper, Onion plus BARBERE Ethiopian 12 Spice Blend to give it a boost.

Toss the HOLY TRINITY, 12 Spice Blend with HOLY OIL (Avocado) into the Instant Pot (IP) and cook it up using the Sauté feature.

Toss in Rice and BONE BROTH!!!! - I also added in a can of Three Bean Salad Mix. cook it up using by pushing the Rice Button on the IP.

Cut up Sausage and place of top of the Jambalaya and use the Manual button for 3 minutes to heat it up.

I love posting pictures of my cuisine experiments and folks are always asking me for the recipe. I toss in every part and end up with a work of art. The only time I have flops is when I try to measure every drop.

Voila!!!!

That really looks and sounds good..... but I was a bit surprised by the three bean salad mixture in it.

I found the three bean salad mixture in a recipe for a Vegan Version - using Vegetable broth. I didn't make the Vegan version but decided to add the three bean mix anyway. It worked out great.
