The Holy Trinity and Cultural Appropriation !!!

Earlier this week, an 8 Quart Instant Pot (IP) arrived at my doorstep along with a heated mattress pad. I'll not be needing a man to keep me warm this winter but if he wants me to cook for him, game.

I delivered my somewhat gently used 6 Quart instant Pot to my Step-. " Gee, You can cook more than eggs in it, " he remarked. I buy eggs from him and told him how easy they are to make in the IP'

Indeed, I've cooked Ethiopian, Jamaican, Vietnamese and East Indian cuisine in the IP. I've made lots and lots of bone broth which has become a staple in my food plan. I pour it into Souper Cubes, freeze it, and VOILA!!! I am good for the week. An 8 Quart IP means less cooking.

This morning, I got a call from our Quaker Meeting Clerk (aka Great Spiritual Advisor). He asked what I was bringing to our monthly pot luck. JAMBALAYA!!!!!

The Challenge is figuring out which culture to Appropriate. Cajun is short for Arcadians = French Catholics. Cajun Jambalaya is not as spicy as Creole which is an ethnic mix of African and American Indian.

Chances are I will find a recipe and improvise the heck out of it. The Holy Trinity Stays!!!! I am serving it to Spiritually evolved folks.

I am learning to use my IP and I also got an air fryer, but the darn thing didn't work right. With all the running around and other stuff that kept me busy all summer, I was past the return date by the time I discovered it was faulty.
Research gave me a place to call and the customer department was very helpful. I just had to send them, via email, the receipt and they instructed me to return the top portion to them. I expected a new top, instead they sent me an entire unit.
Now, I just have to learn to use it.

I've had problems with the venting system on the IP. I replaced the sealing ring and cleaned Floater and Sealing Ring for Pressure and it still wouldn't work. I contacted the company and was instructed to do a steam test. I also watched U Tube videos and finally got it working by banging on it with a wooden spoon. The second time, I had trouble with the venting system, I used the slow cooker feature instead and it worked just fine. It took me a week to figure out that I had the steam release valve on backwards. It was one of my "Dah!" moments.

Chuckling here...... When I got my IP, I looked at the instructions and wondered how I was going to get it assembled, but thankfully, it was already all together!
I still am a bit leery using the pressure cooker, but I'm starting to relax a little bit, the more I use it. Shoot, I canned hundreds of jars of veggies every year with two big old pressure canners, a little old pressure IP shouldn't bother me..... but on those old canners, I could see the pressure readings.

You'll LOVE it once you get started. My fellow Quakers always laugh and joke because when I first joined them - the monthly pot luck meant picking up something for desert at Wal-Mart on my way to the pot luck. Now, I am cooking all kinds of culinary adventures for them.

When I was a working mom, I was always a production cook or left something in the crockpot for when we got home. I cooked fast because my boys were hungry. I am still a production cook but now I am having more fun with it.

My older son is fortunate. He married a gal who LOVES to cook. He's gained weight since marrying her. My younger son cooks for a living. He is also a production cook. We got out for dinner.
